Mara Bellini

Chef Mara Bellini trained in Naples and Chicago before opening Cinder & Crust with a menu that pairs classic technique with Midwestern seasonality.

Pizza should feel generous, alive, and rooted in place. We build every pie around flour, flame, and whatever the neighborhood is craving this week.

2014

Naples apprenticeship

Completed a year-long apprenticeship focused on fermentation and wood-fire service.

2019

Chicago pop-up residency

Ran a roaming pizza residency that partnered with breweries and community gardens.

2023

Opened Cinder & Crust

Launched a permanent home in Logan Square with a kitchen centered on regional produce.
